Finishing your Wine

This is the basic procedure I follow for finishing wine made from fresh or frozen fruit and berries. Finishing the wine allow the fine suspended particles time to sink to the bottom for a crystal clear wine. This step can not be rushed unless you filter your wine.

Racking Wine

• Every 2 months rack the wine and top off with your wine from the 1/2 gallon reserved wine
• Rack the reserve to the smallest container that will hold the amount left
• Continue racking until no fallout occours for two months
